Tucked away in the historic mountain village of Mtein, Ardoum Winery & Distillery is the perfect example of what happens when old-school family traditions meet fresh, modern ideas. They aren't just making wine here; they are crafting everything from small-batch bottles to boutique spirits under one roof.
The Terroir: From the Valley to the Mountains
Ardoum does an incredible job of splitting its process between two different regions:
The Vineyards: The grapes are grown down in the sun-drenched region of Deir El Ahmar in the Bekaa Valley. The vines sit at an elevation between 900 and 1,400 meters where the intense daily sun perfectly ripens the fruit, while the high-altitude chill keeps the flavors bright and balanced.
The Winery: Once harvested, the grapes travel up to the family estate in Mtein, high up in the cool mountains at 1,600 meters overlooking Kneiseh Mountain. This cooler climate is where the magic happens, giving the wine a great, slow environment to ferment and age.
The Craft: Small Batches & Big Variety
What makes Ardoum stand out is that they love to experiment. They harvest every single grape by hand and split their time between a boutique winery and a specialized distillery.
They champion native grapes, turning Obeideh into a crisp, complex dry white wine, and using the local Meksassi grape for a unique, passion fruit-infused wine. For their big, bold reds, they work with favorites like Syrah, Cabernet Sauvignon, Merlot, and Grenache.
The Hand-Carved Stone Cellar: This beautiful, naturally humid cellar is carved right out of the mountain stone. It's the heart of the estate where their premium, full-bodied reds (like their 100% Syrah and 100% Cabernet Sauvignon) spend up to 12 months resting in oak barrels.
The Craft Distillery: Right alongside their winemaking, they use traditional, hand-crafted copper stills to produce high-end spirits. This distillery is where they craft their signature Arak, vodka, gin, and whiskey.
The Story: Keeping it in the Family
Ardoum is a real deal family project. The roots of the winery run deep, stretching all the way back to Great Grandmother Anise. Descendants of that deep mountain heritage, Joseph Khairallah officially founded the modern winery in 1990.
Art and family are woven into everything they do here. Joseph's brother, Uncle Georges Khairallah, was a talented artist. Today, the winery's beautiful labels are entirely inspired by his paintings, and when you visit the stone cellar, you can actually see his original artwork displayed right alongside the aging barrels.
Today, the next generation Christian Khairallah and his wife Jacky have taken the reins. They’ve transformed the family estate into an eco-friendly spot for visitors, keeping those artistic, old-world mountain traditions alive while protecting the land.
