Recipe of the Month
Irene's Honey Cake
Ingredients
1 lb. honey
4 eggs
2 cups sugar
2 cups brewed coffee
2 tsp. baking powder
1 tsp. baking soda
2 tsp. cloves
2 tsp. ginger
1 tsp. allspice
5 ½ cup flour (if thin, add more)
1 tsp. oil
½ cup walnuts
1. Mix honey, eggs, and sugar.
2. Add coffee, baking powder, and baking soda – mix.
3. Add cloves, ginger, and allspice – mix.
4. Add flour and oil – mix. (if thin, add more flour).
***Important: line pan with parchment paper and grease***
5. Pour mixture into pan.
6. Sprinkle walnuts on top.
Bake 350° for 1 hour.

Ripasso is a winemaking process that strengthens the wine by adding partially dried grape skins to a just-fermented red wine. The result is a restarting of the fermentation process so the wine gains in alcohol, color and body. Valpolicella is usually a light red wine with common character and not much complexity. By using the Ripasso process, then the wine takes on a nutty flavor, becomes heavier and gives the mouth a fuller feel to it.
