Irene's Coffee Cake

 

Ingredients for cake:

 

½ lb butter

1 cup sugar

2 eggs

1 tsp. vanilla

2 cups flour

1 tsp. baking soda

2 tsp. baking powder

1 cup sour cream

 

Ingredients for topping:

 

1 Ό cup sugar

1 tsp. cinnamon

1 cup chopped walnuts

 

Cake preparation:

1. Cream butter. Gradually add cup sugar. Beat 2 eggs and add. Add 1 tsp. vanilla.

2. In a separate bowl, sift flour, baking soda, and baking powder, then add sour cream.

Gradually combine steps 1 and 2.

 

Topping preparation

In a separate bowl, mix sugar, cinnamon and chopped nuts.

 

Grease a Spring Form pan.  Pour half of cake batter into pan, pour half the topping. Mix with spatula to swirl topping within the batter. Add remaining batter, cover with remaining topping. Mix with spatula to swirl topping within the batter.

 

Bake at 350° for 50 -60 minutes, until a toothpick can be inserted and comes out dry.

Janet's Peach Cobbler

 

Ingredients

 

2 – 3 cups fruit (we love peaches and blackberries)

1 cup flower

1 teaspoon baking powder

Ό teaspoon salt               

1Ύ cup sugar

½ cup milk

1 Tablespoon cornstarch

Ύ cup water

 

Directions:

 

Sift together Flour, Baking Powder, Salt, and Ύ cup Sugar (not all the sugar called for in recipe).   Add 3 Tablespoons melted butter and ½ cup milk.  Mix into a smooth batter.  Set aside.

 

In a separate container, combine 1 cup sugar and 1 Tablespoon cornstarch.  Set aside.

 

Boil 2/3 cup water.

 

Place 2 – 3 cups fruit in 9” square pan.  Cover with batter.  Sprinkle sugar/cornstarch mixture on top.  Pour 2/3 cup boiling water on top.

 

Bake at 325° for 45 – 60 minutes or until top is toasty brown and topping is not doughy.  Cooking temperatures may vary.

Irene's Honey Cake


Ingredients:

 

1 lb. honey

4 eggs

2 cups sugar

2 cups brewed coffee

2 tsp. baking powder

1 tsp. baking soda

2 tsp. cloves

2 tsp. ginger

1 tsp. allspice

5 ½ cup flour (if thin, add more)

1 tsp. oil

½ cup walnuts

 

Directions:

 

Mix honey, eggs, and sugar.

Add coffee, baking powder, and baking soda – mix.

Add cloves, ginger, and allspice – mix.

Add flour and oil – mix. (if thin, add more flour).

***Important: line pan with parchment paper and grease***

Pour mixture into pan.

Sprinkle walnuts on top.

 

Bake 350° for 1 hour.

Orange Jello Salad

Ingredients:

1 x 3 oz. box Orange Jello
1 cup Water (boiling)
1/2 cup Sugar
8 oz. Sour Cream
1 cup Pecans (chopped)
5.5 oz. can Pineapple (crushed, not drained)
11 oz. can Mandarin Oranges (drained)
1 cup Flaked Coconut

Cooking Directions:

Mix Jello, boiling water and sugar and cool on the counter.  Once cool, mix remaining ingredients and spread on top of jello.  Put in refrigerator and chill before serving.
